制作流程

第一步. 奶油和糖,香草条一起煮开后加入鱼胶片(冰水浸泡至软),过筛后冷却待用

第二步.香草条要一切二,放进锅里煮,这样香草籽可以充分和奶油融合一起,发挥香草的芳香

第三步.鱼胶片必须一片一片放入冰水中浸泡,以防结块无法完全融化入奶油

第四步.意式奶冻料一定要冷却到常温后,才可以倒入磨具中,以防香草籽沉淀从而影响风味

PREPARATION INSTRUCTIONS

Step d 500g of whipping cream, 150g of sugar and a vanilla stick; stir over a low heat. Soak a gelatin sheet in ice water until soft and add it in.

Step ke one vanilla stick and slice down the middle, scraping out seeds inside. Add both to a pan.

Step latin sheet must be soaked one piece after another to prevent it going lumpy.

Step irring continuously, bring to a boil and set aside to cool before pouring into molds.

第二部分 浆果果冻Part II Berry Jelly

所需材料 / INGREDIENTS

树莓果茸 250 g / Raspberry puree

草莓果茸 250 g /Strawberry puree

鱼胶片 15 g / Gelatin sheet

幼砂糖 100 g / Fine Sugar

制作流程

第一步.将树莓果茸和草莓果茸混合一起,和幼砂糖一起煮开

第二步.鱼胶片放入冰水浸泡至软,浆果混合果茸一起过筛冷却待用

第三步.鱼胶片必须一片一片放入冰水中浸泡,以防结块无法完全融化入奶油

PREPARATION INSTRUCTIONS

Step d 500g of pureed raspberry and blueberry into a pan with 100g of fine sugar, and bring to a boil.

制作流程

第一步.冰皮粉和温水配比2:1混合搓团后待用

第二步.将冰皮压扁,先后放入蓝莓,树莓,柚子,软后加入浆果奶冻后,包起搓团放入磨具成型

PREPARATION INSTRUCTIONS
